This is the salmon recipe for nights when there is no time. The glaze bubbles down while the fish finishes, so everything is ready at once.

Why this recipe works

  1. Searing skin-side down first gives crisp skin and keeps the flesh moist.
  2. Adding the glaze only at the end stops the honey from burning.
  3. Basting the fillets builds a sticky, glossy coat in a couple of minutes.

Key ingredients

Soy sauce
Gives salt and savoury depth. Use tamari to make it gluten free.

Tips for success

  • Pat the salmon dry so it sears instead of steaming.
  • Salmon is done at 125-130°F (52-54°C) for medium; it keeps cooking as it rests.

Questions, answered

Can I use skinless salmon?

Yes. Sear the presentation side first for 3 minutes, then flip.

Method

  1. Pat dry the salmon and season with the salt.

  2. Sear the fillets skin-side down in the oil in a large skillet over medium-high heat for 5-6 minutes, until the skin is crisp. Flip and cook 2 minutes more.

  3. Whisk the honey, soy sauce, vinegar and garlic together, lower the heat to medium and pour it into the pan.

  4. Baste the salmon with the bubbling glaze for 1-2 minutes, until sticky and reduced.

  5. Garnish with sesame seeds and spring onions and serve with rice or green beans.

Notes

  • Check that your soy sauce and rice vinegar contain no added alcohol (mirin-style seasonings often do).
