One dough does double duty here: half presses in as the base, the rest gets oats and becomes the crumble. The apples are pre-cooked briefly so the filling is jammy, not watery.

Why this recipe works

  1. Par-baking the base keeps it crisp under the fruit.
  2. Cooking the apples first releases their juice before baking.
  3. Using one dough for base and crumble saves a bowl and time.

Key ingredients

Firm baking apples
Honeycrisp, Granny Smith or Braeburn hold their shape and balance sweet and tart.

Tips for success

  • Cool completely before cutting; warm bars fall apart.
  • Line the pan with a parchment sling to lift the slab out cleanly.

Questions, answered

Can I make these ahead?

Yes. They keep 4 days in the fridge and taste even better the next day.

  1. Heat the oven to 350°F (175°C) and line a 9-inch square pan with a parchment sling.

  2. Mix the flour, brown sugar, salt and melted butter into a crumbly dough. Press two-thirds into the pan and bake for 15 minutes.

  3. Cook the apples with the sugar, cinnamon, cornstarch and lemon juice in a skillet over medium heat for 6-8 minutes, until just tender and thickened.

  4. Stir the oats into the remaining dough to make the crumble.

  5. Spread the apples over the warm base, scatter the crumble on top and bake for 30 minutes, until golden.

  6. Cool completely in the pan, at least 1 hour, before lifting out and cutting into 16 bars.
